HEALTHY BROCCOLI SOUP
Here's one of Denise's favorite soup recipes from Healthy One, Two, Three:
5 c. water
1 head of broccoli
1/2 c. fresh basil
1/4 c. butter
In 5 cups of water, cook a head of broccoli with 1/2 cup fresh basil
(pressed down firmly) until broccoli is tender. Remove broccoli and basil
and puree with about 2 cups of cooking water. Gradually add more cooking
water until the soup is the thickness you prefer. You may add up to 1/4 cup
of fresh butter for extra richness if desired, although we find it is smooth
and delicious without the extra butter. Serve hot, garnish with small basil
leaves or broccoli buds.
