1 POUND OF ROUND STEAK (POUND WITH A HEAVY SAUCER OR A MEAT POUNDER)
CUT INTO 4 PIECES
PEEL FOUR SMALL BAKING POTATOES, SPRINKLE WITH SALT AND WRAP THE PIECES OF STEAK AROUND THEM, FASTENING WITH TOOTH PICKS.
ROLL IN 1/4 CUP FLOUR, BROWN IN THREE TABLESPOONS OLIVE OIL OR OIL. ADD PART OF TWO CUPS WATER, COVER AND BAKE AT 350F FOR ONE HOUR 20 MINUTES.
ADD REMAINING WATER AS NEEDED DURING COOKING, USE RESIDUE FOR GRAVY.
MAKES FOUR SERVINGS.
