1 qt   milk
1 c   farina
¾ c   Sugar
orange rind or concentrate
¼ lb   Butter
¼ t   salt (optional)
Cook farina in milk and sugar. Stir constantly to avoid lumping. Add butter and beat in, cooling mixture a little. Beat eggs in one at a time, careful to cool the farina a bit or the eggs will cook in it. Add grated orange peel. (salt can be added in cooking if desired, but it is not necessary.)
Butter pie plate and pour in mixture.
Bake at 350 degrees for about an hour. top will brown and knife inserted will come out clean. You will have to adjust for your oven. Also, if your pie plate is shallow, you will have to adjust for that as well.
