Solstice stew

1 med yellow squash
1 med onion
3 cups hominy
4 cups chicken broth
4 cups of water
1 pound of tripe
2 table spoons sweet basil
1/2 cup mushrooms
4-5 large potatoes
salt and pepper to taste

cut tripe in small pieces, it will cook better that way.
place the chicken broth on low fire to boil.
chop the onion and mushrooms,potatoes to your size.
place the hominy in with chicken broth to boil.
when broth and hominy have started to boil, add following ingredients
in no certain order, simmer on low heat four 4-5 hours till tripe has reached tenderness, and potatoes are soft.
water will need to be added through out the cooking of the stew,
take care and watch the stew, i find it needs water added every 30 min to 1 hour.
