Tomato and Avocado Salsa

Ingredients

4 large tomatoes, seeded and diced
1/4 cup finely minced onion
2 garlic cloves, crushed
2 teaspoons jalapeno peppers, chopped
3 tablespoons cilantro leaves, chopped
Juice of 1 lime
2 avocados, pitted and diced
1/4 cup olive oil
salt and pepper
Instructions
Seed and dice the tomatoes. There's no need to peel them. Combine these with the finely minced onion and crushed cloves of garlic. Now to bring this to life, add the chopped jalapeno peppers, fresh cilantro leaves and lime juice.

Pit and dice the avocados. Then add the olive oil. Gently toss all of this together and add salt and pepper to taste.

Now you will want to prepare this close to the time you'll serve it. You see if you make it too far in advance the avocados can discolor just a bit but it won't affect the flavor.
