Country Banana Bread
COUNTRY BANANA BREAD
2 extra ripe, medium bananas, peeled
3/4 cup brown sugar, packed
1/2 cup margarine, softened
1 egg
1/4 cup dairy sour cream
1 teaspoon vanilla extract
2 1/4 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup chopped almonds
Preheat oven to 350 degrees.
Process bananas in blender; measure 1 cup.
Beat sugar and margarine until light and fluffy.
Beat in egg.
Beat in processed bananas, sourcream and vanilla until blended.
Combine flour, baking soda, baking powder, salt and cinnamon.
Stir into banana mixture. Stir in almonds.
Pour into greased 9 by 5 inch loaf pan. Bake in preheated oven
65 to 70 minutes or until wooden pick inserted in center comes
out clean. Cool in pan 10 minutes. Invert onto wire rack to
cool completely.
Makes 1 loaf.
