Country Maple Butter Squash


ACORN SQUASH WITH MAPLE BUTTER
  2 medium acorn squash

Seasoned salt

3 tablespoons margarine or butter

3 tablespoons maple syrup

1/4 teaspoon ground nutmeg

Pierce squash with fork. Bake in 375 degree oven 1 to 1 1/2 hours or until fork tender. Cut squash in half crosswise. Slice off ends, if necessary, so halves will be level. Remove seeds. Sprinkle squash with seasoned salt. In baking dish, place squash cut side up. Divide margarine and syrup among halves. Bake 5 minutes. Sprinkle with seasoned salt and nutmeg.

Makes 4 servings.

You can substitute Butternut squash for the acorn squash.
