John’s Cinnamon Craisin Bread


Makes a 2 lb. Loaf


1 1/4 cups warm water
1 ½ tsp. powdered egg substitute
1 tsp. Salt
2 tsp. Vanilla
1 Tbsp. Blackberry flavored gourmet syrup (for flavoring coffee or soda)
1 ½ Tbsp. Canola oil
3 Tbsp. Honey (from a local bee keeper)
3 ½ cups bread flour
1 heaping Tbsp. Gluten
¼ cup dry skim milk powder
1 tsp. Cinnamon
1 heaping Tbsp. Wheat germ
1 heaping Tbsp. Wheat Bran
1 ½ cups Craisins (Ocean Spray sweetened dried cranberries)
3 heaping tsp. Active dry yeast

Set control panel on bread machine for Fruit & Nut Medium (2 lb.) *

Warm water for 30 seconds in microwave.
Add egg substitute to water and mix together.
Pour egg mixture into the bread pan.
Add salt, vanilla, syrup, oil, and honey to bread pan.
Add rest of ingredients in order listed above.


*For my Breadman Ultimate machine, the Fruit & Nut Medium has Rise 1 for 40 min, Rise 2 for 24 minutes, 50 seconds, Rise 3 49 minutes, 55 seconds, and bake time 65 minutes. May need to use crust control option to reduce time and keep bread from being overdone.
