RUSSIAN KOULICH (EASTER BREAD)


1 1/2 c. milk
1/2 c. melted butter
1/2 c. white sugar
1/2 teaspoon brandy
1 teaspoon vanilla
1/2 teaspoon salt
2 envelopes dry yeast
1/2 cup lukewarm water
2 beaten eggs
4 cups sifted flour
41/2-5 cups sifted flour
1/2 cup slivered almonds
1 1/2 cups mixed glace fruits (pineapple, cherries, white raisins)

Scald milk and cool.  Add butter, sugar, salt, brandy, vanilla. Dissolve yeast in lukewarm water; add to the milk mixture.  Stir in eggs and 4 cups of flour.  Cover & let rise in warm place until doubled in bulk (about 1 hour).  Place the rest of the flour in a ring about the size of a dinner plate on board.  Pour mixture in center; knead flour in dough.  Knead in almonds and fruit that have been dusted with flour.  Grease two 3 pound shortening cans.  Place half of dough in each can.  Cover; let rise in warm place until dough reaches top of cans.  Bake 40 minutes at 375 degrees, or until skewer inserted in center comes out clean.  May be topped with confectioners sugar icing.
