Homemade Vegetable Soup

Easy Vegetable Soup that tastes like you slaved over the stove!
This makes about 4 quarts, so if you want less then half the recipe.

In 2 gallon pot, combine:

2 (12 oz) cans tomato paste OR 2 (46 oz) cans tomato juice
Water: if using tomato paste, add to 3/4 of the pot after adding the vegetables and meat OR add 3/4 cup if using tomato juice
2 (16 oz) bags frozen SOUP vegetables
1 1/2 to 2 lbs. ground chuck cooked in chunks; drained
Salt & Pepper to taste

Cover and Start simmering; after 1 hour, add:
1 (8 oz) box elbow macaroni, uncooked
1 (15 oz) can corn
continue to simmer another hour.


Throw it all in the pot..will simmer for about 2 hours. Serve with cornbread or crackers...enjoy.
