Enchiladas


  
2 lbs. ground beef
1 (16 oz.) jar Mild Taco sauce
1 (1 oz.) packet of Taco Bell dry Taco seasoning
2 (16 oz.) can Refried Beans
10 fajita style flour tortillas
4 cups shredded cheese (Mexican, cheddar, or combine)

1.  In large skillet, brown ground beef, stirring to fine texture as it cooks.  Drain.
2.  Add seasoning mix with water according to package directions.
3.  Add cans of refried beans while meat is simmering.
4.  Spoon approx. 1/2 cup of meat mixture onto each flour tortilla, wrap and layer in a lightly sprayed 9 X 13 casserole dish. Should get around 10 into dish. Will be gooey so neatness is not important.
5.  Cover with jar of Taco Sauce.
6.  Top with Shredded cheese. Place in 400° oven to thoroughly melt cheese.

Serve with sour cream, pico de gallo, salsa, hot peppers, etc as your taste prefers.

Makes a nice family size dinner.
