Cream Broccoli & Potato Soup
1/4 cup butter
3 Tbsp. flour
1/4 tsp. salt
1/8 tsp. pepper
1 1/2 cups chicken broth
1 1/2 cups milk
1 sm. (8 oz) box Velvetta cheese
1 sm. (10 oz) box cooked broccoli
2 cups diced cooked potatoes
Melt butter in saucepan. Stir in flour, salt & pepper; cook 1 minute, stirring constantly until smooth and bubbly. Gradually stir in broth & milk and cook until slightly thickened, stirring constantly. Do not boil. Gradually add cheese; stir until melted. Combine broccoli & potatoes and add. Heat thoroughly.
Great with cornbread.
