Vava's Baked Salmon


1 Salmon filet, about 3 lb., skin on
2-3 tbsp. olive oil
3-4 garlic cloves, quartered (use less for the faint of heart)
1/2 cup fresh dill, chopped fine (or about 2 tbsp. dry dill)
Garlic salt
White pepper or lemon pepper

1 9 X 11 roasting/baking pan, lined with foil
Preheat oven to 350 degrees while preparing salmon

Pour the olive oil into the foil lined pan and distribute evenly
Place the salmon filet skin side down in the pan
Insert the garlic pieces into the flesh of the salmon until they are no longer visible
Sprinkle 1/2 of the dill over the salmon
Add garlic salt and pepper to taste

Cover tightly with foil without touching the salmon
Bake in 350 degree oven for approximately 1/2 hour
Remove foil and turn fish over so skin side is up
Peel back the skin, using a small spatula or butter knife
Sprinkle the rest of the dill under the skin and the garlic salt and pepper to taste
Replace skin and sprinkle very lightly with garlic salt
Return to oven, covered loosely with the foil
Bake for an additional 15-20 minutes.

Serve with spinach or Caesar salad and the side dish of your choice.
Red wine such as a nice Shiraz is best with this fish.
