Lasagne Vava


Prepare my tomato sauce, cool and cut the meatballs and sausages in half
(This task isn't so gross if you wear plastic gloves)

1 box lasagne noodles (ribbed, if you can find them)
Olive oil
Salt
1 quart ricotta (you probably won't use it all)
1 large ball of mozzarella, preferably whole milk, sliced
Parmesan cheese, grated fine
A deep dish baking pan, about 10 X 14

Bring water to a boil in a large pot with 2 tbsp. olive oil and a tbsp of salt
Add the noodles, working them gently into the water as they soften
Boil until al dente (means they are pliable and edible but still chewy)
Drain noodles and rinse in hot water briefly

Spread a little sauce in the baking pan
Arrange the noodles over the sauce
Arrange half of the mozzarella over the noodles
With a tablespoon, put mounds of ricotta on the cheese slices
Ladle some sauce with meats, over the cheeses, to cover
Repeat with second layer
Cover second layer with noodles and cover completely with sauce with meats
Sprinkle liberally with grated parmesan

Bake at 350 degrees for 45 minutes, lightly covered, then 15 minutes uncovered.

Serve with green salad, crusty Italian bread and lots of Chianti!
