Spinach Salad a la Vava
1 bag of baby spinach, preferably organic
2 heads of endive
Goat cheese
Grape tomatoes
Candied pecans
Dried cranberries
Raspberry Pecan dressing...I use Ken's or try Trader Joe's if available
Garlic salt
Separate the endive leaves and trim
Stuff with goat cheese & set aside
Toss the spinach & some dressing together with a little garlic salt
Arrange on salad plates
Arrange 4 stuffed endive leaves over spinach, to make a "flower"
Sprinkle cranberries and pecans between endive, using one cranberry and one pecan as decoration on the stuffed endive
Place grape tomatoes in center of the endive flower
Drizzle the dressing in a circle over the stuffed endive.
This should be enough for about 6.
