Vava's Scrambled Eggs


The secret to good scrambled eggs is to turn off the heat while they're still soft.  If you go past this point, they will be dry.  You can increase the ingredients per person, but since I am USUALLY just making them for yours truly, this simple recipe was intended for a party of one.

2 large eggs, preferably cage free/organic (please try them if you haven't...the yolks are darker and have so much more flavor)
1 tbsp. Ranch dressing
1 rounded tbsp. high grade margarine or butter
Salt & pepper to taste
A non-stick frying pan

Whip the eggs and ranch dressing together with a wire whisk
Melt the butter in the pan
Add the egg mixture and as it begins to set around the edges, start folding and stirring slightly.
When eggs are still a little soft, turn off the heat and turn the eggs one more time.
Add your salt & pepper AFTER the eggs are done as the salt tends to toughen the eggs if added while cooking.

***Optional ingredients:
Bacon bits (I use the real ones for the zero carb effect)
Chopped scallions, peppers, mushrooms (sautee first before adding)
Cheese:  Feta, sharp cheddar, Gouda etc.
