Watermelon-Sweet Onion Salsa
Make at least one hour ahead so it can marinate.
2 cups chopped seedless Watermelon
1/2 medium Sweet Onion (Vidalia or Walla Walla)
1 15 oz. can Black Beans, rinsed and drained
2 or 3 small Jalapeno (Serrano for hotter- Anaheim or Pasillo for milder) -I do Anaheim-
Leaves from 6-8 stems of Cilantro chopped
1/2 tsp Salt
2 Tbls Lime Juice
Combine all ingredients and mix well. Place in a container with a tight fitting lid.
Refrigerate at least one hour before serving.
Toss and taste to adjust seasoning before serving
