Cream of Broccoli Soup
1 Head of Broccoli rinsed and cut into bite size pieces.
1 Cup of water
Steam Broccoli until tender, Drain and set aside.
Melt in a large sauce pan 1/2 cup of butter,add one small diced onion, Stir in a 1/2 cup of flour, 1/2 tsp Salt and 1/2 tsp Pepper.
Cook 2- 3 minutes then add 1 10 Oz can of Chicken Broth and 3 cups Milk. Cook until thick, Stir constantly to keep from scorching.
Add 1 cup Grated Cheddar Cheese and the Broccoli pieces.
Continue stirring until the cheese melts and blends and the broccoli is heated completely.
Remove from heat and garnish with your favorite garnish.
Serve Immediately
