Sweet Potato Corn Cakes
3 lbs - Sweet Potato
1 cup - Frozen Corn Kernels
2 - green onions chopped (I used a red onion last night instead of green onion. I just chopped maybe a 1/3 cup)
1/4 cup fresh cilantro chopped (you can use as much as you want or less)
1 tsp cumin
1 tsp salt
1/3 cup - yellow cornmeal
1 cup - plain bread crumbs
1/4 tsp - cayenne pepper (I used hot sauce instead)
I also added a little bit of red bell pepper to the recipe (chopped)
After taking the skin off, I boiled the sweet potato. Once cooked, I let it cool off for a bit.
Mix all of the ingredients and the pan fry with a little of bit of oil (I used coconut oil). Ready to serve.
Made about 8 patties.
