Black Bean Burgers

5 Tbsp veg oil
1 small onion chopped
1 medium red bell pepper
4 medium garlic cloves, minced
1/2 tsp ground cumin
1/4 tsp turmeric
2 Tbsp of ketchup
1 1/2 cups canned black beans, drained
1 cup cooked basmati rice
2 cups fresh breadcrumbs (I used Publix)
Dash of Hot sauce
1 1/2 tsp salt
1/2 tsp ground pepper
Heat 1 Tbsp of oil in a skillet. Cook, while stirring on occasion, onion, red pepper, and garlic until soft and onions are translucent (8 minutes). Add cumin, turmeric, and ketchup (cook for 1 minute).
I used a food processor to mix the onion ingredients, bean, and rice. Process well and then transfer to a bowl. Mix in breadcrumbs along with salt and pepper, and hot pepper sauce.
Heat 2 Tbsp of oil in a skillet and drop 1/4 cup of the mixture into skillet. Flatten into 3-inch patties. Cook until golden brown, 3 to 5 minutes per side. Serve :-)
