Healthy Mashed Potatoes


Ingredients:
6 Russet Potatoes (leave skin on) diced
1 head cauliflower (chopped to roughly the same size as the potatoes)--I used a bag of froze cauliflower and have about equal portions of the potatoes and cauliflower
1/4-1/2 tsp garlic powder
4 Tbsp Margarine or butter
Seasonings to taste.

Instructions:
1. In a large pot add potatoes and cauliflower, and cover with cold water
2. Bring to a boil and cook until the potatoes and cauliflower are tender, about 10-15 minutes
3. Drain the potatoes and cauliflower
4. Add them to a large bowl and add the garlic powder, margarine, and seasoning
5. Beat using a hand electric mixer on the lowest speed until creamy and fluffy
