Sweet Melon Pickles
1 cup lemon juice
1/4 cup honey
1/4 cup cider vinegar
Cut up melon into chunks.
Cook melon in a pot with 1 1/2 quarts water for 20 minutes
Drain water, leaving a little in the bottom of the pot.
Add lemon and honey and cider vinegar, and 1/2 cup of the strained water. Cook for one hour.
