Easy tomato aspic

2 envelopes unflavored gelatin
1 cup boiling water
1 cup tomato juice

Place the unflavored gelatin in a bowl. Stir in one cup boiling water for one minute. Add one cup tomato juice. Garnish with a few rinsed cherry or grape tomatoes. Place bowl in refrigerator for one hour.

Serves 3 - 4.
