Corn Flour Shortbread cookies
2 cups corn flour
1 stick butter, softened
1 cup gluten-free pancake mix
1/2 cup sugar
1/4 tsp baking powder
Mix ingredients together, preheat oven to 425° F, grease baking tray, drop cookies onto baking sheet with a tablespoon, bake for 8 - 10 minutes, or until golden in colour.
Turn off oven, allow to cool - check for texture and remove.
