That Rotisserie Chicken

Leftovers of yesterday's delicious rotisserie chicken



Avocado Chicken Toast

Wearing food service gloves allows a cook to shred the chicken without touching it.

Mash one avocado with 1 heaping tablespoon of plain yogurt while additionally cooking shredded chicken in toaster oven with 1/4 cup of hot water - cook for ten minutes, turn off toaster oven.

Make toast, spread lightly with plant-based spread or butter - 4 slices - place on plate, add avocado spread, top with cooked chicken.

Quarter each open faced sandwich



Pan-fried chicken

1 or two slices of chicken
1 spoonful water
1 spoonful oil
Seasoning to taste


one heaping teaspoon of oil, plus one spoonful of water, add thinly sliced chicken, then, turn on heat onto low. Turn every few minutes carefully, avoiding being splattered or burned, until thin slice or slices of chicken are covered in water/oil mixture. Season to taste.


Toaster oven grilled filet of chicken

1 1" slice of breast meat of chicken, skin removed
1 spoonful of water
3 slices of tomatoes per serving or filet
grated or shredded cheese


Place filet of chicken in toaster oven, add spoonful of water, top with slices of tomato, and spoonful of shredded cheese. Cook at 350 degrees Fahrenheit for about ten minutes, or until cheese is golden brown. Add seasonings to taste.
