MiniCucumbers in Cranberry Juice
Mini Cucumbers
2 cups cranberry juice
1 cup apple juice
1 cup water, if uncovered
1/3 cup water, if covered
2 cups cucumbers
Place on low heat, cook for 20 minutes, turn off.
Alternatively
Cover bottom of saucepan with freshly washed, rinsed mini cucumbers
Cover the minicucumbers with cranberry juice
Add a big splash of apple juice
Add a big splash of boiled water
Cook for 15 minutes, test with a fork, if soft, turn off heat, if not soft, cook for another 5 minutes, and test again - repeat fork test of mini-cucumber until it is soft.
