COUNTRY CORN MUFFINS (Posted: Oct 3) COUNTRY CORN MUFFINS
2 (8 1/2 ounce) packages corn muffin mix
10 slices bacon, cooked and crumbled
3/4 cup strawberry or blackberry preserves
Preheat oven to 400 degrees. Prepare muffin mix according to package directions; stir in bacon. Fill paper lined 2 1/2 inch muffin cups 1/3 full. Drop 2 level teaspoons preserves in center of each. Add remaining batter to fill cups 3/4 full. Bake 15 to 20 minutes or until golden brown. Remove from pans. Serve warm.
Makes 12 to 18 muffins.
