AUNT JEAN'S POUND CAKE

AUNT JEAN'S POUND CAKE

2 sticks unsalted butter, room temperature
1/2 cup shortening
3 cups flour
3 cups sugar
5 eggs
1 cup whole milk
1 teaspoon baking powder
1 tablespoon sherry

1.          Cream butter, shortening and sugar until light and fluffy.
2.          Add eggs one at a time, beating well after each addition.
3.          Sift dry ingredients together.
4.          Add vanilla and sherry to milk.
5.          Add dry ingredients to sugar and egg mixture, alternating with liquid, beating just to blend, until all ingredients are combined.
6.          Beat batter on medium speed for 5 minutes.
7.          Place into greased and floured 10-inch tube pan and place into COLD oven.
Bake: 350 degrees for 1 hour and 15-20 minutes until a cake tester comes out clean.
Icing – use chocolate fudge icing
