Easy Peasy Apple Pie (Posted: Nov 13,   Modified: Nov 13)
6 Green Apples peeled, cored and sliced
125g butter, melted
2 - 4 Tablespoons castor sugar (depending on your taste)
1 60g egg, lightly beaten
1 1/2 cups Self - Raising Flour, sifted
1 teaspoon Mixed Spices (optional)
Cinnamon sugar



Place Apple in a pan with a little water, and cook over a low temperature until the apples are cooked to a soft pulp. Remove from the heat and let cool to room temperature.

Melt the butter over the stove, add sugar and stir over heat without boiling until sugar is dissolved. Cool slightly and stir in egg. Add mixed spices and flour. Mix to form a soft dough.

Press half the dough evenly over the base of a 20cm pie dish. Spread the apples over the top of this, and you can add a slight sprinkle of cinnamon at this stage if you wish.

Roll the remaining pastry between two sheets of baking paper to form a circle. Invert the pastry over the top of the filling, then press edges to seal with a fork, and trim the excess pastry.

Sprinkle with cinnamon sugar and bake at 180C for 25 - 30 mins, or until the pastry is golden. Serve the pie hot with cream, custard or ice - cream.


APPLES CAN BE COOKED A DAY AHEAD. KEEP COVERED, IN REFRIGERATOR. PIE CAN BE BAKED SEVERAL HOURS AHEAD, REHEAT AS REQUIRED.
