5 Minute Shrimp and Pea Salad
1 lb frozen cooked large cleaned and peeled shrimp (21-30 ct)
2 cups frozen peas
6 cups Lettuce Leaves (try using pre-packaged lettuce salad)
1/2 cup thinly sliced red onion
1/4 cup ranch dressing
PLACE shrimp and peas in colander; rince under hot water until thawed. Drain well. Place in large bowl; set aside.
ARRANGE lettuce on 4 plates to resemble cups. (place lettuce from bag on plates)
ADD onions and dressing to shrip mixture; toss lightly. Spoon over lettuce.
Makes 4 servings
(2 1/2 cups each)
