My Favorite Hash Brown Taters


This was a favorite of my kids growing up, and so very easy!

2 large russet potatoes (or use an extra one if they are the smaller ones)
Vegetable oil (I prefer peanut oil, but any oil except olive oil is OK)
Salt & Pepper to taste
1 large non-stick skillet
1 extra large spatula

Grate the potatoes coarsely, with skin on (you can peel them, but I love the skins)
Preheat the pan for a minute and add the oil...enough to make a circle that's about 6" in diameter
Add the grated potatoes, spreading them into a circle to cover the pan
Lightly season with salt & pepper
Fry until crispy and brown on the underside
Using your spatula, gently flip the potatoes over
Season this side with salt & pepper
When the underside is brown & crispy, slide carefully onto a platter

Serves 2-4
